Ingredients

  • 3 cups rolled oats
  • 2 cups nuts and/or seeds
  • 1/4 cup brown sugar
  • 2 tablespoons oil
  • 1/4 cup + 1 tablespoon real maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 2 1/2 teaspoons matcha powder

Instructions:

Preheat oven to 250º F. In a large bowl, combine oats, nuts, and brown sugar. In a separate bowl, combine oil, maple syrup, vanilla, and salt. Pour over oat mixture and toss to coat. Spread mixture out onto two baking sheets and bake 1 hour to 1 hour 15 minutes, stirring every 15 minutes. Remove from oven and scrape mixture into large bowl. Let cool for a few minutes then sprinkle matcha over and toss to combine. Keeps in an airtight container for several weeks.

Makes 6 popsicles

Ingredients

  • 3 cups Greek yogurt
  • 3 tbsp honey
  • 1 tbsp matcha green tea powder
  • 1 tsp vanilla extract

Instructions:

Instructions: In a medium mixing bowl, stir together yogurt, honey, and vanilla. Add matcha green tea powder and whisk together until smooth. Fill popsicle molds with yogurt mixture and place in freezer for four hours, or until completely frozen. When ready to serve, run popsicle molds under warm water to loosen the popsicles. Remove and serve immediately.

Ingredients

  • 1/4 cup chia seeds
  • 3/4 cup almond milk
  • 1/2 cup full-fat coconut milk
  • 1 tsp matcha powder
  • 1/2 tsp vanilla extract
  • 2 tbsp maple syrup

Instructions:

Whisk all the ingredients together in a bowl until well combined. Place in the fridge for at least an hour before serving or if you have time, overnight. Optionally top these chia puddings with some non-dairy yogurt and a sprinkle of matcha powder
